Potato Soup

This is the ole standby, I'll just list it out in steps. The amounts make our big potful so you might want to 1/2 everything.

Start with 1 TBS of Olive Oil in the bottom of a soup pot, use the one with the thickest bottom so you don't scorch the soup. (Okay don't half this)
Chop 1 onion in tiny little pieces and 3-4 celery stalks and add it to the oil. Turn the burner on medium heat and stir around the onion and celery. Cook until the veggies are soft and turning transparent.
Peel and rough chop 10 potatoes, 1 carrot, 1 head broccoli (opt). Add to the onions and oil. Pour 1 box of chicken broth over all, put on the lid and bring to a boil. When it starts boiling lower the heat as low as it can go and still be bubbly. Cook for 30 minutes until potatoes are tender all the way through. Remove from heat DO NOT DRAIN and mash everything up. Add milk or half/half or evaporated milk just a little at a time until it is the right consistency. If you want to add frozen corn, or cheese add it now.

this weeks devotional

Today I shared this quote "meaningful morning prayer is an important element in the spiritual creation of each day—and precedes the temporal creation or the actual execution of the day"

Breadsticks

1 TBS of yeast
1 1/2 cups warm water
1 TBS honey
1tsp salt
3-4 cups flour

In a large mixing bowl, soften yeast and honey in warm water, gently stir in salt. Add flour gradually, until dough pulls away from side of bowl and is tacky but not sticky. Remove and knead into ball. Divided ball in two and roll one portion out. Cut into strips with pizza cutter. Take each strip, fold in half and twist. Lie on greased baking sheet. Bake at 425* for 10-15 minutes until breadsticks are light brown around edges.

For Pizza crust. Roll out dough on greased pizza pan, prick all over with a fork. Spread marinara sauce on top and top with favorite toppings. Bake at *450 for 15-20 minutes.

Did you catch the date? Two years, 6mos since I last posted. Wow! So much has happened and changed and grown and it's all been documented on facebook. I wonder if there is a way to transfer fb posts into a blog? hmmm

One big change this summer is that our darling Jessica moved to Oregon. She is going to be a nanny for my brother's family while my sister in law goes back to school. She will take care of their two cute little girls 4 days a week.
AND, that is the reason that I came here tonight. I'm going to start keeping this blog up to date, mostly for Jessica so she knows what we're up to. I'll also share lots of recipe's with her, she keeps calling and asking for this and that, if I post them here then they will be here in blogland and not getting deleted in emails. I'll also share thoughts and feelings I have as we adjust to having our daughter live so far away. I keep thinking of things I haven't taught her yet, things I need to say to her. Of course there will also be lots of homeschooling talk and adventures mentioned. I looked through past posts and we did so good at documenting for awhile there. We need to pick it back up.
